Will need
500g fresh small squid
1 egg
olive oil lemon juice
White bread crusts bunch of parsley
1-2 garlic cloves salt
black pepper
Cooking
Peel calamari, separate tentacles from head, wash. Cucumbers to boil, finely chop, add finely chopped parsley, crackers, garlic puree, salt, pepper, pour the oil, egg, mix well. Stuff calamari with this mixture to 2/3 of their volume, place on oiled bases of steamer baskets, cook for 10 minutes.
Serve at once, pouring over a mixture of oil, lemon juice and finely chopped parsley.
