The ingredients of this salad we will cook in the microwave.
For 6 servings of 150g each
You will need
Cauliflower – 250g, or half a pack of frozen cauliflower
Mushrooms mushrooms or white, frozen – 6-8 pcs.
Fresh bell peppers, peeled from seeds – 1 pc.
Green apple, sour, peeled of seeds and skin – 1 pc.
Canned red beans – 100g, or 1/2 jar be sure to drain the liquid
Hard-boiled eggs – 2 pcs.
Fresh lemon juice – 1/2 cup. l.
Mayonnaise – 4 tbsp. l.
Greens for decoration dill, parsley – 5 gr
Salt to taste
Cooking steps
1. Take a 1,5-2 l glass pan with a lid. Put cauliflower florets and chopped mushrooms, cover and cook in a microwave oven with an inverter on medium-high power for 5-7 minutes. When the oven beeps to finish, stir the ingredients and leave under the lid for 5 minutes to “firm up”. Let it cool. Slice cooked mushrooms and cabbage.
2. Cut the bell pepper, apple and egg into small cubes and sprinkle with lemon juice so that the flesh of the apple does not darken. Add the ingredients to the salad. Also add canned beans, mix salad with mayonnaise, salt to taste.
3. Place the salad in a salad bowl, garnish with bell bell pepper strips and sprigs of herbs.
