Stuffed eggplants – a light and hearty dish. It is very important that the vitamins in the eggplants remain! You can choose stuffing with vegetables and cheese or with ham and cheese. This dish is quick and easy to make.

For 4 servings

You will need

Fresh eggplants in medium size – 2 units., or 600 g

For the filling with vegetables and cheese

Fresh tomatoes – 2 pcs., or 200g

Fresh bell pepper – 1 pc., or 100g

Garlic – 2 cloves, or 10 g

Grated cheese – 4 tbsp. l., Or 100g

Chopped parsley greens – 10 g

For the Ham and Cheese Stuffing

Ham, sliced or diced – 6 tbsp. l., or 150g

Grated cheese – 4 tbsp. l., or 100 g

Chopped parsley herbs – 10g

Soy sauce – 2 tsp. l., or 10g

Salt, ground black pepper to taste

Parsley greens for decoration – 1 small bunch

Cooking steps

1. Cut eggplants in half lengthwise and put them in cold and salted water for 5-10 minutes to remove bitterness from their skin. There is no need to peel the skin as it contains a lot of very healthy flavones.

2. Put the eggplant halves with the slices upside down in a large non-metallic pan. Place them so that the thickened parts of the eggplants are facing the edge of the dish. Put the lid on and cook in microwave mode in automatic “Vegetables” program or on medium-high power for 6-7 minutes. After the buzzer sounds, leave under the lid for 5 minutes to “stew”. Now make a 2.5-3 cm deep cut along each eggplant half without cutting through the skin.

3. Prepare the filling: in the first version, mix grated cheese with tomatoes, peppers and minced garlic, in the second – mix grated cheese with chopped ham and herbs. Season toppings to taste with salt, pepper, soy sauce.

4. Place the filling as a pile in each eggplant. Put the stuffing on tightly, keeping in mind that during cooking the cheese will melt and the volume of the stuffing will decrease.

5. Put the stuffed eggplants in the right-sized glass dish so that they fit together snugly. Close the dish with the lid and turn on the microwave automatic mode “Vegetables” or set the power to medium high for 3-4 minutes. After the beep, carefully remove the lid so that drips of condensed moisture do not drip from the lid into the filling and make it soft.

6. Sprinkle the stuffed eggplants on a dish, garnish with parsley leaves and freshly ground pepper.
