Semifreddo chocolate ice cream

We will need:

Small appliances for the kitchen

2 egg yolks,

50 gr.powdered sugar,

175 ml. milk,

125 ml. cream,

125g. bitter chocolate.

Method of preparation:

In a large bowl whisk egg yolks and sugar. Heat milk to boiling point and, continuing to whisk, pour milk over mixture of eggs and sugar. Return the mixture back to the saucepan and gently reheat, stirring all the time. When the mixture is thick enough to completely cover the back of a wooden spoon, remove it from the heat and add the chocolate, which has already melted in a bowl over a pot of boiling water.

Stir everything and leave it to cool, then add the cream. Pour this mixture into the ice cream maker and chill for about 20-30 minutes.

This is a version of the Italian ice cream “Semifredo” which is a traditional dish that has a very soft and mousse-like density.
