Products:
500g carrots with stalks,
4 halibut patties 200g,
1 lemon, pepper,
½ bunch each of parsley, basil or dill,
30g oil,
100 ml vegetable broth, salt.
Preparation: rinse and peel carrots, trim stems to 2 cm. Cook for 12 minutes in a perforated tray.
Rinse the fish cutlets, dry them, season with pepper and lemon juice, put them in a solid tray after the first 12 minutes and steam them together with the carrots for another 12 minutes.
Wash the greens. Towel dry and finely chop. Melt butter in a pan, remove carrots, fold in butter and sprinkle with herbs. Add vegetable broth, salt and pepper, simmer. While the carrots are getting ready, we keep the cutlets at 70 degrees. When serving, salt the cutlets and garnish with carrot greens.
