Some people are better at detecting bitterness, for example, while others taste worse. Everyone has his or her own taste predilections, so the results of any tasting remain subjective to a greater or lesser degree. The accuracy and unbiasedness of the results is largely up to the taster. On the day of the tasting, the participant must not overeat, drink beer or alcoholic beverages, or wear perfume. If you have a runny nose, it is better not to participate in the tasting.

The character of the foam is one of the sources of information about the quality of beer. The foam should last at least 4 minutes.

Fresh, quality beer always demonstrates a high foam resistance. The foam should be fine-meshed. A high quality of the beverage is also indicated by the so-called lace marks, which remain on the inner surface of the glass after the beer has been drunk.

If the foam is highly porous and falls off quickly, it means that the carbonation has not been added to the beverage naturally, but through artificial carbonation.

Disadvantages

Alcohol is present in one quantity or another in all beers. The main thing is that the alcoholic tones do not stand out too much and blend in with the overall bouquet. The defects of beer should include the presence of extraneous elements of taste or aroma – ethereal or fermented.

Freshness

It is recommended to test no more than 5 – 7 samples of beer during one tasting, because afterwards the taste sensations dull down.

The freshness of beer can also be tasted. If the beer has a light sulfuric aroma, it is fresh. This aromatic component fades with time.

Stale but still drinkable beer shows grassy tones in the taste and a decrease in bitterness.

A sweet, bready taste or a hint of wine can be observed. You can get the feeling that the beer reeks of paper, wood or even household chemicals such as varnish, paint or thinner. All of these are also clear defects in beer associated with its aging.
