One delicious and budget-friendly recipe involving baked zucchini that I would recommend is stuffed zucchini boats. To make this dish, slice zucchinis in half lengthwise and scoop out the seeds to create little boats. In a bowl, mix together cooked quinoa, diced tomatoes, black beans, corn, diced bell peppers, and spices like cumin, paprika, and garlic powder. Fill the zucchini boats with the mixture and top with shredded cheese. Bake in the oven until the zucchinis are tender and the cheese is melted and bubbly. This recipe is not only budget-friendly but also versatile, as you can customize the filling with whatever ingredients you have on hand. It’s a great way to use up leftovers and create a tasty meal before payday.
