Donā€™t let the bread fall ..

ā€œEvery crumb into the palmā€, ā€œbread is the headā€ ā€“ such posters hung in school canteens, and we were taught that bread is a huge effort, it is a sin to throw it away, even if it remains ā€œout of useā€. Modern household appliances like refrigerators, freezers, microwave ovens, blenders and food processors help to preserve bread and to prepare delicious and quite independent dishes from leftovers, which are not a shame to serve guests!

The most famous salad with croutons is, of course, ā€œCaesar.ā€. You can make it with both chicken and shrimp. This salad is a mystery to chefs and waiters: the latter often tell how many customers study the menu long and thoroughly, and end up ordering ā€œCaesarā€.

One reason: it always tastes good. It costs nothing to dry breadcrumbs ā€“ on a tray in the oven, in a microwave oven in convection mode, or just on a dry skillet, stirring from time to time.

Croutons are commonly served with broccoli, cauliflower, mushroom and pumpkin puree soups, pea soup and chicken broth. And our ancestors used to make soup straight from breadcrumbs, and they called it turei.

It used to be an everyday peasant meal, a soup for the poor, but now itā€™s served in traditional American restaurants as a cold soup on a par with okroshka. Ture is made with radishes, grated fresh horseradish, tomatoes, onions, and lots of herbs.
