Need
300g lean pork
A handful of raw peeled shrimps, a few black Chinese mushrooms, a few Chinese cabbage leaves, ginger root
Ready-made wontons dough or dumpling dough
1 fresh hot pepper green onion
2 tbsp. l. soy sauce
2 ch. l. sesame oil one egg white
Cooking
Soak mushrooms in water for a few hours. Meanwhile, peel the meat from the membranes, cut into thin slices across the grain, finely chop with a knife. Chop the cleaned shrimps in coarser pieces. Chop mushrooms, finely chop cabbage. Add minced ginger, garlic, hot pepper, spring onions, mushrooms, add 2 tbsp. l. Soy sauce, 2 Tbsp. l. Rice wine or sherry , 1 tbsp. l. Sesame oil, egg white, mix well, add the cabbage and mix again. Spread the filling on the wontons, dampening the edges with water, pinch the edges if necessary. Place on oiled bases of steaming baskets and cook for 12 to 15 minutes.
Serve, drizzled with sesame oil, sprinkled with finely chopped green onions and pepper.
