Cut the eggplants lengthwise into halves.
With a spoon or knife, cut out the inner pulp so as not to damage the rind, –
you get “boats”.
Cut eggplant flesh into small cubes, cut bell peppers, garlic, tomatoes in the same way, grate cheese, add some oil, mix everything and fill the “boats” with this mass.
Place them in the oven on the low wire shelf. All proportions according to taste.
Bake for 25-30 minutes at medium fan speed and 180°C.
