Need
1 chicken
Handful of shiitake mushrooms
Ginger root
1 ch. l. Szechuan pepper
2 tbsp. l. rice wine hot pepper
soy sauce
Preparation
Soak mushrooms in cold water for 2 hours, brown peppers on low heat in a dry pan, grind with coarse salt in a mortar. Coat the chicken with a mixture of rice wine, finely chopped ginger, hot and ground pepper.
Slice mushrooms thinly remove shanks , place on base of steamer basket, place chicken on top, cook for 35 minutes Chicken program . Pour the soy sauce into the broth with the mushrooms, boil everything down to a sauce.
Slice chicken, serve at once with sauce and sprinkle with finely chopped green onions and hot pepper.
