Smeg vacuum degassers use a technology which automatically evacuates air, up to 99.9%, using a special sensor and far superior to traditional vacuuming processes. This technology keeps food alive up to three times longer and unchanged in flavor and aroma, and offers innovative ways to prepare dishes just like in haute cuisine restaurants.

Preservation

Once the air has been completely evacuated from the container bag, the resulting vacuum protects the food from dust and bacteria, as well as blocking the oxidation process. So the flavour and nutritional value of food, whether solid or liquid, cooked or raw, is always preserved. It’s a very practical way of preparing healthy dishes that taste as if they were made of fresh ingredients.

Vacuum packed food can be kept up to 3 times longer on average at room temperature and in the refrigerator if it is also frozen all the bacteria are destroyed and the food can be kept for months with all its flavour and consistency.

Sous-vision

Vacuum sealing makes it possible to cook food at a low temperature sous-vide , preserving the aromas, juices and nutrients of the ingredients, giving the dish a consistency and flavor that cannot be achieved with traditional cooking methods.

The vacuum cooker has other interesting uses: for example, meat can be marinated and seasoned in a much shorter time because during the vacuum sealing process, the meat fibers relax and absorb seasonings much faster.

Features of the SMEG vacuum cleaner

The vacuum degasser proposed by the Italian brand is made of food-grade stainless steel inox stainless steel with a tempered glass cover, combining reliability and aesthetics: a perfect balance in the SMEG tradition.

With a height of only 135 mm and a lid opening angle of up to 65 degrees, the Vacuum is flexible in use. The unit has self-locking rails to prevent accidental closure. Ample drawer capacity means it can process food one or two servings at a time.

Another feature of the SMEG built-in vacuum cleaner is the three levels of air evacuation: “delicate”, “medium” and “high” – as well as the “chef” function for marinating and ripening foods. After selecting the preferred vacuuming intensity, bags are sealed in a two-step phase to eliminate the risk of incomplete sealing and insufficient vacuum formation.

Smeg also offers a range of food storage bags and containers made from the highest quality food safe polymers, free from PVC and BPA Bisphenol .
