Salad with beets, goat cheese and pine nuts

We’ll need:

Ingredients for the salad:

Beet – 300g

Goat cheese – 100g

Pine nuts – 50 g

Mixed lettuce – 40 g

Salt

Pepper

Beet sauce

For the beet sauce:

Beet juice – 150 ml

Balsamic vinegar – 50 ml

Olive oil – 30 ml

Honey – 50g

Salt – ½ tsp.l.

Starch

Cooking Method:

Wash the beets and bake in a preheated oven for 1 hour at 163°C. Let cool, then slice. Place the mixed salad on a plate, top with sliced beets, goat cheese, sprinkle with pine nuts and dress with beet sauce and olive oil. Add salt and pepper to taste.

Beet sauce:

Squeeze beet juice into a saucepan, add balsamic vinegar, olive oil, honey, salt. Bring to the boil, turn down the heat and simmer for 15 minutes. If necessary, tighten the sauce with starch, previously diluted in cold water.
