Peel and chop the onion 1 large head, 150 g , finely chop the garlic 1 clove , put them together in a 2 l container and add the vegetable oil.
Cover and cook at 750 watts for 3 minutes. Wash the vegetables. Cut the eggplant and zucchini into small pieces, sprinkle the bell peppers with strips and pour the vegetables into a bowl with the onion and garlic.
Add bay leaf and mix thoroughly. Cover with lid and cook at 750 W for 5 minutes more.
Add 200g of chopped canned tomatoes without skins and continue cooking at 750W for another 5-8 minutes. Then salt, pepper, add thyme and stir.
