For the dough:

400 grams of flour
- 100g butter
- 1 egg yolk
- 1 cup white wine
- Salt
- 1 sachet of yeast powder.
For the filling:
- 300g of cottage cheese
- 100 g ham
- 100 gr cheese
- 100 g processed cheese
- nutmeg
- Taste and season with salt and pepper.
To prepare: put cottage cheese in a bowl, add grated cheese, diced ham and a pinch of pepper. Stir everything well, stir in a little milk, season with salt, add nutmeg.
Form a hill of flour, put melted butter and egg yolk in the depression, pour in the wine, add salt and yeast powder, stir and knead the dough for a few minutes until it is smooth and homogeneous. Divide the kneaded dough into two parts.
Roll out two tortillas. Place one in a cake pan and fold high up on the edges. Spread the curd filling and cover with a second pastry. Connect the edges of the pastry. Prick the top with a fork, brush with egg yolk diluted with water, and bake in a hot oven for 40 minutes.
