8 egg whites,
butter,
1.5 cups sugar.
Passion fruit cream:
0.5 cup sugar,
1 cup natural passion fruit juice,
3 tbsp. spoonfuls of corn flour,
2 glasses of milk,
Chocolate to taste.
Garnish: 1-2 ripe mangoes sliced thinly.
Method of preparation:
Beat egg whites and sugar. Butter a 30cm square baking dish and place the mixture in it, put it in a bain-marie pan and simmer for 30 minutes. Cool and transfer to a plate with high sides. To make the cream, add the sugar and flour to the milk, stirring, bring to a boil over heat, then simmer until thickened. Pour in passion fruit juice, stir, cool and place on top of pudding.
Top with melted chocolate or garnish with mango slices to taste.
