Strictly speaking, okroshka should be prepared on kvass, and kefir in it is an alien from the east that has made a literal raid of the territory! Kefir okroshka popularity can be explained by the fact that it’s very easy to buy good kefir, but kvass is not so popular.

Store even natural kvass is not suitable for okroshka, it must be “white”, not sweet and very fresh, and this can be made only by yourself according to a fairly complex recipe.

We think of okroshka as an easy and quick dish to prepare, which is good for country houses, when you need to quickly, tasty, and healthy to feed the “tired of the sun” housemates.

Okoshka is often considered a dish of leftovers, so it uses different kinds of meat: for example, a leftover piece of turkey from dinner, a piece of ham from breakfast, already boiled vegetables and eggs, but still a tip: take fresh products, not leavened or completely random.

v. Pokhlebkin recommends not to “rough up” this dish with radish, although, as we believe, it is a matter of taste: radish or green radish are traditional for Uzbek sour milk soup “chalop” – the great-grandfather of kefir okroshka. The only recommendation – if you add these vegetables – grate them or use a food processor, and they do not impart a rough taste to the okroshka.

The ways of preparing okroshka are the same: the liquids are mixed, vegetables, meat, eggs “crumbled”, herbs are rubbed with salt, and all this wealth is added to kefir or kvass.

Sometimes a dressing is made from the spices that are included in the recipe: horseradish, pepper, herbs, mustard are mashed and mixed with a small amount of liquid base, then adding this mixture to the plates. So here are the ingredients for a few tried-and-true ocrochettes, and you know how to make them!

Okorshka meat classic

  • Small appliances for the kitchen

    1 l of kvass

  • 1 cup of cucumber brine
  • 2 finely chopped boiled tongues or veal
  • 5 jacket or baked potatoes
  • 1 fresh and 1 salted cucumber
  • 2 bundles of green onions
  • 2 hard boiled eggs
  • Salt, mustard and ground black pepper to taste

Light sourdough ration with matsoni

  • 0,5 l of matzo or kefir
  • 0,25 l of mineral water with gas
  • bundle of dill
  • bunch of green onions
  • 3-4 hard-boiled eggs
  • 2-3 fresh cucumbers
  • 5-6 radishes
  • 1 tablespoon horseradish
  • salt to taste
  • ice.

Nourishing okroshka on kefir

  • 0.5 l of kefir and 0.25 l of mineral water with gas or 0.75 l of kefir
  • 200g of ham, sausages, boiled meat or tongue
  • 2 eggs
  • 2 boiled potatoes
  • 2 fresh cucumbers
  • 2 boiled turnips
  • 4-5 radishes
  • sour cream
  • Dill, parsley, coriander, spring onions, mustard, horseradish, salt to taste
  • ice.
