We will need for 10 servings:
Forest mushrooms assorted, boiled โ 500 g,
Onions โ 300 gr,
Fresh carrots โ 250 g,
Salt โ 5g,
Sunflower oil โ 50g,
4 pepper mill mix โ pinch,
Ground cloves โ a pinch,
White mushroom and herb mixture โ a pinch,
Balsamic light vinegar โ 1 tbsp.l.,
Also:
Fresh dill for decoration โ 5 sprigs.
Mushroom caviar
Cooking Method:
1. Cut onions in half rings and carrots in julienne.
2. Fry onion, carrot, boiled mushrooms, salt and spices in sunflower oil. Cook stirring until mushrooms are browned.
3. Add finely chopped dill and balsamic vinegar, stir and cook 2-3 minutes more. Cool to room temperature.
4. Pass the toasted mushrooms through a coarse grinder and place the mushroom roe in a salad bowl.
5. Before serving, decorate the dish with sprigs of fresh dill.
