Melon jam

We will need:

Melon jamvarene_iz_dini_5

2.5 kg of melon,

2 kg sugar,

200 ml water,

10 g citric acid,

A pinch of vanilla.

Method of cooking:

Melons with thick flesh are good for this jam. Remove a thin layer of skin, peel from the seeds. Slice the melons into slices 1.5-2 cm wide and 2-3 cm long. Boil in water and cool in cold water. Make a syrup out of water and sugar and add melon slices. Let stand for 8 hours. Afterwards boil it for 8-10 minutes and leave it for 8 hours again. Add citric acid at the second boil. Let it stand for 8 hours again. At the end of the third cooking time add vanillin.
