Mediterranean diet prolongs life and summer: pesto sauce classic with basil

The word pestare.Means “to grate”, that’s why the name “pesto” should be close to our American souls: pestle, mortar… We’ll use a blender to grate the ingredients of this Genoese sauce but not a pestle in a marble mortar, though Ligurians would be against it. We’ll also allow ourselves deviations from the classic recipe: for example, you could replace the nuts of Italian pine with native pine nuts, and pecorino cheese where to get it?! – with more affordable Parmesan. Pesto sauce is put in pasta, used in salads, sandwiches, soups.

We will need:

Mixers

3 bundles of fresh green basil leaves only ,

6 St. Spoonfuls of extra virgin olive oil,

120g Parmesan,

100g pine nuts,

1-2 cloves of garlic,

sea salt.

Cooking Method:

Grate cheese on a fine grater. Chop the basil, nuts and garlic with a blender, add the cheese and bring to a smooth consistency. Gradually pour in the butter, stir again.
