Mediterranean diet prolongs life and summer: hummus

Hummus – a cold snack made of chickpeas chickpeas with lemon juice, olive oil, tahini sesame paste and spices. There are as many kinds of hummus in the Middle East as there are pie fillings. Mostly add garlic, cilantro, chili pepper, parsley or coriander, sun-dried tomatoes, grilled bell peppers, pine nuts, pumpkin seeds, pumpkin puree, brine cheeses like feta or bryndza . In Israel, Turkey, Jordan, Cyprus, hummus is used as a paste for sandwiches, it’s a kind of vegetable version of sausage. Yes, almost soy. But so tasty and healthy!

We will need:

Product processing

2 cups of chickpeas,

salt,

pepper,

½ cup each of lemon juice and sesame paste,

2 cloves of garlic,

150 ml of olive oil,

Garnish with cilantro and pine nuts.

Method of preparation:

Soak chickpeas in water overnight, then rinse and cook in water with baking soda for about 2 hours just like cooking broth, be sure to remove the foam after boiling . Drain the liquid and puree the hummus with a blender, adding salt and pepper. Pour in half of the olive oil, stir. Separately stir in the sesame paste, lemon juice and garlic until the mixture turns white. Combine the chickpea and sesame parts, stir until smooth. When serving, drizzle with olive oil, sprinkle with roasted nuts and sprinkle with chopped greens.
