We will need:
Two ripe mangoes,
125 ml. water,
100g. sugars,
2 egg whites,
Juice of ½ lemon.
Method of preparation:
Make a syrup of sugar and water see Raspberry sorbet and when it cools, pour it into an ice cream maker. Purée the peeled fruit in a blender and add it to the syrup together with the lemon juice and lightly whipped egg whites. Refrigerate for 15-20 minutes.
