Kebab marinade

Marinade for beef

  • Electric grills

    ½ tbsp. l. lemon juice

  • 1 cup red wine
  • &frac14 ch. l. dry mustard
  • 1 onion head
  • bay leaf – 2 pcs., cloves – 1/2 tsp. l., rosemary – ½ tsp. l.
  • sugar to taste.

Mix red wine vinegar with wine and sugar. Add dry mustard and stir. Cut onions into rings and put them in a bowl, pour the mixture into it, add bay leaf, cloves, rosemary, bring to the boil and leave to cool. This marinade would also be good for game.

Kvass marinade for tough meat

  • 1 medium head of garlic
  • 4 onions
  • 2-3 tbsp. l. lemon juice
  • 0,5 l. Sour kvass or cucumber brine
  • salt to taste.

Crush a bunch of garlic with a garlic peeler, mix it with finely chopped onion, add vinegar, season with salt to taste, then mash the mixture well. Dilute the mixture prepared for marinade with kvass or cucumber brine. This marinade is better for marinating old meat or poultry with tough meat.

All-purpose marinade

  • 2 garlic cloves
  • 1 head of onions
  • 2 tbsp. l. vegetable preferably olive oil
  • 1 ch. l. Dry mixture of marjoram, basil and thyme

Crush garlic with a crusher or grate it with a fine grater. Chop onions. Mix all thoroughly with vegetable oil and dry herb mixture. Heat a little and let cool. Make more of this marinade and use it as a topping for meat and vegetable dishes as well.

Liquid moisture” marinade

Calculated for 1 kg of meat:

  • 0.5 kilo onions
  • add 300 g of herbs parsley, coriander, basil, tarragon, dill
  • Yessentuki-17 mineral water or tea mushroom infusion
  • ground black pepper and salt to taste.

Cut onion into rings, mash it and add to the meat. Put the finely chopped herbs in the same place. Season lightly with salt and pepper to taste. Fill everything with mineral water or mushroom infusion and leave for 10-12 hours in the refrigerator.

Exotic marinade

Calculated per 1 kg of meat pork is better :

  • 2 ch. l. honey
  • 2 ch. l. soy sauce
  • 4 garlic cloves
  • 8 tbsp. l. pineapple juice
  • 2 tbsp. l. hot pepper sauce.

Mix honey, soy sauce, garlic, pineapple juice and hot pepper sauce. Pour the marinade over the meat. Cover and place in a cold place for at least 2 hours, turning from time to time.

If you have a large group of friends on your picnic, don’t forget to consider their tastes. Other foods are easy to prepare and even less time-consuming than meat kebabs. Try it and see for yourself how easy and delicious it is to make kebab with chicken, fish and fruit. Do not forget about children, health food fans and lovers of diets.

With what sauce?

The essential addition to a good shashlik is a sauce. For once, give up prepared ketchup and treat yourself and your guests with your own homemade sauce.

Ingredients:

  • onion
  • sweet bell pepper
  • small carrots
  • sugar, salt, olive oil
  • garlic
  • tomato paste.

Add chopped onion and carrot to a frying pan with hot oil and fry just a little. Then add crushed bell peppers and tomato paste. Since tomato paste is the main part of the sauce, you’ll need a lot of it. Let the mixture come to a boil and then add sugar, salt, and some spices to it.

Remove sauce from heat and dress with finely chopped garlic. Allow to cool and serve.
