If you don’t have a sugar thermometer, that moment will come when the liquid starts to turn brown. Quickly add the almonds, then move the pan from the heat and gently pour the mixture onto flat greased foil. Leave until the mixture cools and settles, and then pour this into a blender and process to chop everything into equal pieces.
Set aside a tablespoon of this praline, and add the rest to the vanilla ice cream in the PURPLE 5 minutes before the ice cream is ready. When you serve the ice cream, don’t forget to sprinkle the top with the leftover praline for decoration.
