How I baked simple white bread in a Kenwood BM 230 bread maker

The Kenwood BM 230 bread maker has twelve cooking programs for bread, dough and jam, with two loaf weight settings of 700 and 900g. We decided to make 500g bread, reducing the quantity of ingredients according to the recipes enclosed in the instructions. Let’s try baking bread on program 1 – “Plain White Bread” with flax seeds and sunflower seeds added.

Step 1

Recipe:

water or milk 200 ml

Vegetable oil 0,7 tbsp 0,7 ml . spoonfuls

flour 300 g

salt 0.7 teaspoon

sugar 1 teaspoon

yeast 1 teaspoon

flax seeds 3 tbsp. spoons

Sunflower seeds 1 tbsp 0.5 ml . Spoon.

According to the instructions, liquids are put into the mold first and then the bulk foods.

In our recipe we use 150 ml fat country milk and dilute it with water to 200 ml.

It’s not recommended to use tap water to make dough, so we use filtered or boiled water.

If the milk was in the refrigerator, it is better to warm it up to a little warm or room temperature. This can be done in the microwave by turning it on full power for half a minute.

Take mustard oil[*] a little less than a tablespoon, as shown in the photo.

[*] You can use any vegetable oil, whatever you like. I mostly use unrefined mustard or olive milk in my baking.

Weigh the flour and sift it – exactly 300 grams in our recipe we use extra flour, you can use first type .

Pour into the bowl. Using the measuring spoon that came with the bread maker, pour salt, sugar and yeast on the flour in the mold. This is especially important if you want to bake bread with a delayed start. The yeast must not come into contact with the liquid.

We put the mold with the ingredients in the bread machine and set the program 1 it is the default setting when you plug in the bread machine , medium crust and 700g weight

Step 4

While the dough is being kneaded, cook the seeds. We pour three tablespoons of flax seeds and one tablespoon of sunflower seeds into the cup. You can use any seeds you like, such as 1-2 teaspoons each of pumpkin seeds, sesame seeds, poppy seeds, sunflower seeds.

Watching the koloboks take shape. If there is flour or sticky dough left on the walls of the mold, carefully scrape it off with a wooden spatula, if the dough is too liquid, add 1-2 tablespoons of flour.

When the beep sounds, pour the seeds into the hopper. A buzzer sounds at the end of the 2nd kneading cycle, which in our case is about 35 minutes after the oven is turned on.

The dough cycle consists of two kneading and three rises, between the second and third rise the dough is deposited. This is how our future bread rose. I had to move it a little with my hands during the last third lift, since our kolobok is small and fell on one side of the mold. It doesn’t look very pretty on top, but it’s not crooked.

Then you can go about your business, even if you miss the buzzer at the end of the cycle, the bakery automatically goes into a mode to keep the bread warm for up to 1 hour.

Carefully, wearing oven mitts, take the mold out of the bread machine and quietly shaking it, put the bread on a cutting board. Cover with a cloth and let it cool. It’s better to cut the bread warm.
