Cottage cheese mousse with strawberry and basil sauce

Needed:

150gm 9% cottage cheese, 150ml 38% cream, 60g powdered sugar, 100g cane sugar, 20 fresh strawberries, 1 sprig of green basil, black pepper.

Preparation:

Whip the cream and powdered sugar until stiff and frothy. Then mix gently with the cottage cheese until smooth. Put into the tins and place in the fridge.

Cut strawberries into 4 pieces, add sugar and basil and stew at 120°C, stirring for 10 minutes.

Drizzle cooled curd mousse with hot strawberry sauce and season with pepper.
