Will need:
9 tablespoons dark coffee, medium roast
1 liter of water
150 grams of brown sugar
1 teaspoon molasses
1 Aniseed cinnamon stick optional
Cooking for 4 people
Pour water into the pot, add the sugar, molasses, cinnamon and anise and slowly bring to the boil. Stir so that the sugar and molasses dissolve completely. When the mixture comes to a boil, pour in the dry coffee, then remove from the heat, cover and let stand for 5 minutes. Pour the drink into the earthenware cups and serve at once. Add a few extra grains of anise.
Tip: Use French roasted coffee, but no darker than for espresso, so it can retain flavors of spices and molasses.
