Chickpea and bean soup and hummus: a meat substitution course

We will need:

For the soup:

Dried chickpeas and red beans – you can use canned ones 1.5 multi-cup each,

Water – 12 multistacks,

Carrots – 1pc.,

Onion – 1pc. finely chop or grate and fry ,

Tomatoes – 2-3 pcs. Large ripe or ½ can of tomatoes in their own juice remove skins and slice ,

Garlic – 3-4 cloves,

Celery – 2-3 stalks chop ,

Cilantro, basil, thyme and other herbs, and

Salt and red pepper to taste.

You can add some potatoes, rice or even noodles to the soup, but we make it fundamentally predominantly protein with slow carbs – it’s healthier that way.

For hummus:

Dried chickpeas – ½ bag about 200 g ,

The chickpeas – 150-200 g a paste made from sesame seeds, lemon juice, olive oil and garlic – you can make it yourself in a blender ,

½ teaspoon each of ground black pepper, cumin, coriander,

It tastes like salt,

Thyme or a mixture of dried Italian or Provencal herbs ,

Roasted pine nuts and t.p.

Soup with chickpeas and beans

Method of preparation:

Now that was a challenge! You know, the usual way to cook chickpeas – chickpeas? It needs to soak for at least 12 hours, and preferably a day, while adding a pinch of soda to the water to soften it, but this, of course, does not improve the taste of the dish. Then boil the chickpeas for at least two and a half to three hours. But bean and chickpea soup in my family is a necessity because we don’t eat meat, and these legumes are the richest source of protein. More of chickpeas we make – hummus, a popular dish in the Middle East, a kind of pate – no worse than meat, which successfully replaces the sausage, which is made out of who knows what.

Result of pressure cooking in the “Garnishes” program with the “Legumes” extension: chickpeas cooked to the correct consistency in 57 minutes this is the maximum time in the “Legumes” program without any soaking with baking soda. Together with chickpeas was ready and beans. It’s a wonderfully rich broth that’s as good as beef broth. The only nuance – the rest of the ingredients had to be added later, when the pressure decreased and steam came out: for example, celery, onions, grated carrots and tomatoes do not need to boil for so long, five minutes is enough. But, in principle, if there is no time – you can cook everything together, it will still be very delicious!
