The holidays are already knocking at our door and we want to be surprised and inspired. I propose to please our homes with a tender chicken roll, which is very easy to prepare, the roll will be the “king” of the holiday table, and all the guests will be delighted!
We make a shopping list:
– 1 large chicken preferably not less than 1.5 kg
– 150g of hard cheese
– 300g of mushrooms Chickpeas and porcini mushrooms will do as well
– 1 head of onions
– 400 ml of meat broth we will boil it in the process
– Ground red pepper, black pepper, coriander, 2 cloves of garlic, salt
– Lettuce leaves and greens for decoration.
To prepare:
Wash the chicken, we do not need the body, legs or wings for the loaf. Turn the carcass over with its back to the top, make a deep cut and cut out the fillets with a sharp little knife *see photo .
Boil the chicken body for the broth. We finely chop the mushrooms and fry them in a pan, add the chopped onion and grate the cheese. When the mushrooms are cooked, put them in a bowl to cool and add the cheese. Prepare the sauce: Mix 50 ml of broth with spices I add a lot, so that the sauce was not very liquid, and the chicken was with a spicy crust , garlic, salt to taste.
We open the chicken, put the filling evenly: mushrooms and cheese. Depending on the size of chicken you have bought, roll can be sewn up with threads or pinned with toothpicks.
Spread the sauce on the roll.
Put the roll on the tray and pour the sauce over it with a brush. Place in preheated oven for 15-20 minutes. When the time is up, take out the roll, which has already browned, and pour ½ of the broth over it. Return the roll to the oven for 15 minutes and repeat the operation with the remaining bouillon.
After 10 minutes we check if the chicken is ready with a knife. After making sure that the loaf is ready, let it cool.
Let’s slice it into thin slices, put lettuce leaves on the plate and make a roll. Decorate with greens. Done, bon appétit!
