Carrot cake

Children often don’t like vegetables, but carrots are a must, and in combination with butter to absorb vitamin A. You don’t have to tell them about the carrot cake, they probably wouldn’t guess, it’s so tender and delicious. You can even have a competition: Who will guess what this charm is made of?? I cook this pie in a Panasonic NN-CS596 microwave oven with convection and steam.

Carrot cake

Needed:

For the dough: 500 g carrots, 4 eggs, 200 g sugar, 250 g hazelnuts, 250 g Pyshka margarine, 100 g flour, 2 h. l. leavening agent, 1 hr. l. Cinnamon, pinch of salt.

For the filling: 500g cream cheese Mascarpone, Philadelphia , 250g carrot jam, 150g sugar and 1 lemon.

To prepare: Grate carrots on a grater. Roast hazelnuts in the microwave in the mode “Convection” at 200 ° C for 15 minutes, then remove the husks from the nuts.

In a blender, turn hazelnuts to powder, add flour, cinnamon, baking powder, salt, mix everything with nuts and carrots.

Beat eggs and sugar with mixer and mix into carrot mixture.

Melt the margarine in the microwave and add it to the pastry. Put the ready mixture into silicone forms and bake the cake in a microwave oven in “Convection” mode with steam moistening at 180 ° C, small forms – 30 minutes, large – 45 minutes.

Cool the mass and put cream cheese on top.

Jam: mix grated carrots with sugar, lemon zest and juice. Cook the mixture for 20 minutes in the microwave, cool it and spread it on the cheese.
