Beef thick side – 1000 g.
Marinade #1:
Salt coarse – 2 tbsp.l.,
granulated sugar – 1 Tbsp.l.,
Ground black pepper – 1 tbsp.l.
Marinade #2:
Chaman ground fenugreek – 2 tbsp.l.,
Sweet paprika – 1 tbsp.l.,
Ground chili pepper – 1 tbsp.l.,
Ground black pepper – 1 tsp.l.,
Water warm – 100 ml,
Also:
Garlic – 1 head.

Oursson DH0620D Dehydrator
Method of preparation:
1. Wash and dry the beef slice with a napkin.
2. Mix ingredients for marinade #1 and Dollars into meat.
3. Place the meat on a rack to drain the liquid into the tray or container and put the beef in the refrigerator for 3 days.
4. Every 12 hours, turn the meat over, drain the liquid from the tray, and rinse the tray.
5. Mix the dry ingredients for marinade #2, then pour water in small portions and stir the mass.
6. Squeeze the garlic through a press and stir it into marinade #2.
7. Spread marinade #2 over the surface of the basturma pieces. Use Oursson’s silicone brush.
8. Put the meat in the fridge for 2 more days. Cut the beef into two pieces before placing it in the dehydrator.
9. Line a high-sided tray with parchment and arrange the squares for the basturma.
10. Set temperature – 35C and time – 48 hours. Turn the pieces of beef every 12 hours and drizzle with marinade #2.
11. Basturma is ready when you feel the outside firmness and elastic texture of meat inside.
12. Put ready basturma into the fridge, cool, then slice thinly and serve.
