ANKARSRUM kitchen machine: Noodles and orange juice with Bolognese sauce! Day Two.

A bit more and the Swedish ANKARSRUM kitchen machine would have turned into a Perpetuum Mobile in my kitchen, making a variety of sauces for several lifetimes in a row

! At least in one life, the long-lasting machine had to twist over pasta with Bolognese sauce – one of the favorite dishes in my family. I’ve looked long ago and adapted the recipe to our tastes. The only thing left was to make the children happy again with their mommy – of course, we could not get away with just one sauce….

So: day two.

TEST #3. MAKING BOLOGNESE SAUCE

The main prerequisite for making pasta sauce fast besides having all the necessary ingredients is a good multi-food grinder.

The meat grinder is included in the delivery set of the ANKARSRUM. And it’s solid, heavy, giving the impression of a perpetual motion machine. By its fundamental nature this Perpetuum Mobilena reminds our grandmothers’ indestructible meat grinders which served all their lives and now are ready to mince meat at least every day. But the meat grinder in the combine has an important advantage over the “old ladies” – it is electric. Moreover, unlike stand-alone devices, this one is also multi-speed. You regulate its operation by selecting the speed on the control panel, depending on the task at hand.

The design features that immediately catch your eye are the thick grid 8 mm and the massive knife 1.2 cm thick .

The multi-food grinder is quick and easy to assemble, just like other similar multi-food grinders. You can have it ready to go in a couple of minutes.

So, first, we pass the vegetables through the meat grinder, and while they are stewing in olive oil, we put the beef in the meat grinder.

There was no problem to process the meat. The food processor didn’t even have to be turned on full speed, everything happened on medium speed.

In about 3-4 minutes the minced meat was ready. You can clearly see in the pictures that the meat was not “squeezed” as it sometimes happens in some meat grinders, but rather it was spun, and the minced meat was of high quality.

Time to assemble the meat grinder is 2 minutes.

COOKING SURPRISES

As I’ve written before, this meat grinder has a thick knife and grate. Apparently, this design feature is associated with the fact that in the bowels of it remains uncooked food residue. Regardless of what you grind, the remainder is left over in any case.

If at the end of the process, put in the grinder, for example, a piece of bread, it remains, and the meat is twisted without a remainder.

The knife and the grid should be immediately wiped dry after washing. I did not, and there were traces of rust on the parts.

TEST #4. ORANGE JUICE

This juicer comes with an attachment for making citrus juice. When it’s turned on, the ANKARSRUM becomes a juice extractor for oranges, mandarins, etc.d.

There are no difficulties in assembling the juicer – everything is simple and clear even without the instructions.

Cooking:

You need to hold the half of the orange with your hand as you rotate the press.

Speed of rotation is adjustable – by the way, conventional presses rarely provide this possibility.

But there is no reverse – periodic rotation of the juicer in the opposite direction.

It takes 40 seconds to squeeze the juice out of one orange at medium speed.

Squeezing quality – you control the process yourself. I squeezed, practically, until the crust.

COOKING SURPRISES

This press is no worse than those sold separately. The whole juicing process is exactly the same as on a freestanding juicer of this type. I squeezed the juice of 10 oranges in 10 minutes, I got a full liter jug. The amount of pulp in the juice – average, a lot of it remained on the sieve.

In doing so, at the end of the process, the juice began to accumulate there as well. A couple of times during the squeezing time I took the wet pulp and put it in a shallow strainer and squeezed with a spoon. But I have to do the same thing with an ordinary citrus juicer.

The form included one – for a medium-sized orange, but since you have to press by hand, the second form – for a lemon, and will not need, and with so many accessories in the machine, not even needed.

Not on purpose, but I did crash-test: a plastic bowl fell out of my hands and hit the tile floor – the plastic survived the impact, but still do not recommend repeating such a test.

TEST #5. SUFFERING IN NOODLES

I wanted to cook homemade noodles, especially since the kit came with plastic nozzles of various shapes. I must explain: among the accessories, which can be bought additionally, there is a machine for making pasta, which initially turns the dough into thin sheets, and then cuts the plate into strips. I did not test it, but different shaped attachments, which are inserted into the meat grinder of the combine instead of the grid.

So, the process of making homemade noodles involves 2 steps:

1. Kneading dough.

2. Plugging in the meat grinder for the finished noodles to come out.

MAKING THE BATTER

The noodle recipe is simple – flour and egg. The dough turns out very steep, and I’ll tell you right away, I added another egg, otherwise I just rolled over dry flour in the bowl of the machine.

With the first task the combine cope quickly enough – in 5-7 minutes the dough was kneaded.

THE NOODLES DID NOT GO WELL!

Of course, I am very presumptuous and tell about my negative experience not to criticize the combine actually, there is nothing to criticize , but to warn the same naive cooks like me: To make noodles and cookies requires experience.

Cooking:

So, assembled the meat grinder, instead of the grid set a beautiful nozzle for noodles, put a piece of dough into the charging hatch of the meat grinder, turned on 1 speed. The dough went…But, the noodles started to stick together and go in one lump.

Changed the nozzle to another, same effect. Anyway, I tried my best – it all came together in one lump. I put the dough to dry – didn’t help. In general, I’ve suffered myself, smeared the dough all over the meat grinder and all the attachments, and the noodles did not work.

But you have to do something with the dough. I remembered that it comes with a nozzle for shaped cookies. Decided to use it. I changed the grid and that’s how I salvaged the situation. In general, I have not made a fat shaped something..

TOO MUCH

Why am I writing all this? The food processor is not an automatic machine, it’s not a bread machine where you put all the ingredients and you get the desired product.

Combine is a tool that takes care of mechanical work and copes with it well, but it will not replace you in the kitchen and deprive you of the right to make a mistake.

That’s why something complicated may not work right away. And in this case, as they say, “you can’t blame the mirror”..

So, in this case, I realized that I would need to look closely at the professionals for noodle dough: what should be the consistency, color, etc.d.

Also, if you are planning to make such products, pay attention to the pasta machine. It’s a more professional aid than plastic grates.
